Chicken Pie with Red Skinned Mashed Potatoes, Green Beans and Corn

It the end of the semester and this is my last Sunday dinner I have to write for my blogging class. That being said I chose to make one of my favorites... Chicken pie. And what is Chicken pie without the trimming but as always I did them with a twist. Ingredients needed for this meal are:

Chicken Tenders
Pie Crust
Red Skinned Potatoes
2 Cans of Cream of Chicken
2 Can of Corn
Fine Cut Green Beans (Frozen)
Also items found in the home:
Salt
Pepper
Sour Cream
Butter
Oil
Soy Sauce
Italian Dressing
Milk
2 Pot
Medium Pot
Skillet
Glass Pan
2 Bowls

Preheat the oven to 350.

Begin with adding water, butter and oil into one of the pots. Then added the chicken tenders and boil until all the chicken is cooked.



Allow the chicken to cool. While cooling open the cans of cream of chicken, place in bowl and then about 2 cups of the chicken broil from the boiling of the chicken. Stir until combined.





Then in the other pot add water and place about 8 of the potatoes and allow to boil until the potatoes are mashable.



Once the chicken is cooled, shred the it in a bowl.



Set aside. Then in the glass pan place one of the pie crust in the bottom. Them spread the shredded chicken evenly over the the pie crust. After that pour the cream of chicken mixture over the chicken.




Put the other pie crust on top and put in the oven for about 30 minutes or until the pie crust is golden brown.

While the pie is in the oven mash the potatoes and add milk (add enough make them as creamy as you want), butter, salt, pepper and the sour cream to give the potatoes a twist.


Next, open the cans of corn and cook them how ever you want. I added salt and pepper with some butter and heated until it came to a boil.




Then in a skillet place the frozen green beans. As they heat up pour soy sauce and Italian dressing over them. Simmer until the green beans are tender.




By this time the chicken pie should be done as well as everthing else.



Serve.

Unfortunately my mother brought the food for this meal for me so I did not get to keep the receipt but I do know the told cost was $14.82.

Ice Cream Cake with No Baking

I had never thought about using ice cream sandwiches to make an ice cream cake before I seen it on Pinterest, so I had to make it and plus I really did want to use the oven. On I $ave on Everything from A 2 Z, you can find this simple dessert recipe that I chaged to make it my own (which means I used items with peanut butter). For the dessert you will need:


1Box of 12 individual wrapped Ice Cream Sandwiches
Magic Shell Reese's
Whipped Topping
2 Packets of Resse's (4 Resse's total)
Hot Fudge (Optional, I end up not use it)
Also these items from home:
Plate
Knife







Start by unwrapping the sandwiches and stacking them on the plate. Between each layer pour some of the Magic Shell Reese's.




The sandwiches should be 4 row high. Once that is done place in freezer for about 10 minutes so that sandwiches can set.




Now spread the Whipped Topping over the sandwiches and place back in the freezer for about 5 minutes.




Pour the Magic Shell Reese's on top of the cake and crumble the Reese's over top of the cake.




Serve.





Enjoy! Cover and place in freezer when done.




I brought the items for the cake at the same time i brought the items for the Chicken Taco Salad, so for the Magic Shell Reese's ($2.89), 2 Reese's ($1.98), Ice Cream Sandwiches ($3.67), and Whipped Topping ($0.99) I spent a total of $9.53.

Chicken Taco Salad

For this meal I wanted to do something simple and individuals could make it their own. The one thing I know for sure you can make your own, a salad. So I made taco salads but instead of hamburger meat I used chicken.

Ingredients needed are:


Chicken Tenders (cut up into squares)
Taco seasoning packet
Can of corn
Cheese
Tortilla chips
Lettuce
Sour Cream
Salsa
1/4 cup of water
(whatever else you would like to add)




Start cleaning and cutting up the chicken and then cooking the chicken in a skillet.




Once the chicken is cooked add the taco seasoning and water to the chicken and allow to simmer for about 5 minutes.





Set the chicken aside.

Open the can of corn and put in a small pot add butter and heat until ready to serve.




Once everything is done, you can make your salad anyway you want.

I put the Tortilla chips on  the bottom, then the chicken, lettuce, cheese, corn, sour cream and salsa.

Serve.

If you subtract the items for the dessert I will make on Wednesday ( Magic Shell Reese's ($2.89), 2 Reese's ($1.98), Ice Cream Sandwiches ($3.67), and Whipped Topping ($0.99) = $9.53), I spent  a total of $14.34.


Fudge Pie


Sorry this post comes so late, it has been a crazy week for me at school. But on a good note I did cook this past Wednesday but just did not have time to put it up.

I made a simple pie that is supper to make. I found the recipe again on Pinterest which was posted on the website The Budget Diet.  Ingredients needed are:

1-9" frozen pie crust, unbaked
1 eggs
1/2 cup flour
1 cup sugar
1 teaspoon vanilla
1 stick butter, melted
2 oz. unsweetened chocolate squares, melted





Preheat oven to 350°.

First, I melted the chocolate squares in the microwave for about 30 seconds and addition 10 seconds that is needed.


Then in another small bowl beat the egg for 1 minute.

Then add egg, sugar, vanilla, melted butter to the melted chocolate and beat until combined.


 



Once the batter is mixed pour into unbaked pie crust.




Bake in over for 25-30 minutes or until center is almost set.




Allow to cool for about 20 minutes.
Serve.

I had everything for the pie already so the only thing I had to buy was the pie crust which was about $2.

Deli Sandwich and Chips


Since we been having such good weather lately most of us like me want to be outside instead inside cooking. So for this post, I did what my mom and I often do during the warm weather….make deli sandwich.

The one good thing about making sandwich is there is no wrong way to make them and you can always put on them anything you want.

For these sandwiches the ingredients used are:
Honey Mustard Dressing
Loaf of bread (French)
Roast Beef and Turkey meat (or whatever sandwich meat you like)
Lettuce (or whatever sandwich toppings you like)
Cheese (the kind you prefer)
Chips
Along with these items from home:
Cutting Board
Knife
Rubber Spatula 


First cut the oven on broil. Then cut the loaf in half.






With the rubber spatula spread honey mustard dressing on the loaf and place in the oven for about 5 minutes or until golden brown.






Then add the sandwich meat on the bottom half of the loaf. Also add the cheese and lettuce.





Then top with other half of loaf.







Serve.

The total cost for everything for this meal was $14.61. I was lucky to find a deal at Walmart were I could get a pound of deli meat and ½ pound cheese for only $9.00, which helped the cost a lot.

Make It Your Own Mix


It finally Spring time weather and everyone want be outside, so I thought I would make something that you could have on the go.

I decided to make a trail mix that could be sweet but filling too. The ingredients for this variety from what you have around.  

I first brought a bag of Peanut Butter Trail Mix for about $3 and then I added to it make it my own.

The ingredients I used were:

Peanut Butter Trail Mix
Marshmallows
Chocolate Chips
Chocolate Chip Cookies (Crumbled)
Peanut Butter Granola Bar (Crumbled)
Along with these items from home:
1 medium bowl
4 small bowls
Spoon




















First I crumbled the cookies and granola.

In the medium bowl pour some of the trail mix.





Then added each of the ingredients and mixed them in.





Mix them all together.







Bag and serve.

Chicken Biscuit with Eggs and Grits


Last year around the end of September and beginning of October, a friend and I went to West Virginia to watch my college play football while there we went to this restaurant called Perkin’s Restaurant & Bakery  and the food was great. We both tried this chicken biscuit that was covered in gravy and cheese and for this meal I tried to replicate but with my own twist. The ingredients needed for this meal are:

Boneless Skinless Chicken Tenders (cut in half)
Italian Dressing
Buttermilk Biscuits
Eggs
Gravy (kind you prefer)
Quick Grits
Shredded Cheese
Along with these items from home:
Skillet
Large Pot
Small Pot
Cookie Sheet
2 Bowls


First remove chicken from packaging and put in bowl (Remember to wash hand when handling chicken). Then pour the Italian dressing over the chicken, cover and place in refrigerator for about 2 hour to marinade.




Then with the Skillet adding a little oil and heating it and cook the chicken until light brown.  




Place chicken on paper towel to drain extra grease and set aside.




For the side items you can choose what you want, but I brought items that could be made fast.

The biscuits I took out of the can and place on the cookie sheet in a preheated of 350° for about 10 minutes or until golden brown.





I made the grits the same way I did before when I cooked the Sausage and Egg Casserole. Boiling water with salt and then adding the grits until they are thick then add butter.





For the gravy, I just opened the can and place in pot and warmed on the stove until it was ready to be served.




The last thing I did was make the eggs, you can cook them any way you want, and I scrambled mine and added cheese on top.





Once everything was cooked I plated the food. First I cut open a biscuit and place 2 pieces of the chicken in it then putting the top back on the biscuit. Next I put gravy over the biscuit and sprinkled with cheese. Add the grits and eggs to the plate to finish it up.


Serve.
