Chicken Taco Salad

For this meal I wanted to do something simple and individuals could make it their own. The one thing I know for sure you can make your own, a salad. So I made taco salads but instead of hamburger meat I used chicken.

Ingredients needed are:


Chicken Tenders (cut up into squares)
Taco seasoning packet
Can of corn
Cheese
Tortilla chips
Lettuce
Sour Cream
Salsa
1/4 cup of water
(whatever else you would like to add)




Start cleaning and cutting up the chicken and then cooking the chicken in a skillet.




Once the chicken is cooked add the taco seasoning and water to the chicken and allow to simmer for about 5 minutes.





Set the chicken aside.

Open the can of corn and put in a small pot add butter and heat until ready to serve.




Once everything is done, you can make your salad anyway you want.

I put the Tortilla chips on  the bottom, then the chicken, lettuce, cheese, corn, sour cream and salsa.

Serve.

If you subtract the items for the dessert I will make on Wednesday ( Magic Shell Reese's ($2.89), 2 Reese's ($1.98), Ice Cream Sandwiches ($3.67), and Whipped Topping ($0.99) = $9.53), I spent  a total of $14.34.

Chicken Biscuit with Eggs and Grits


Last year around the end of September and beginning of October, a friend and I went to West Virginia to watch my college play football while there we went to this restaurant called Perkin’s Restaurant & Bakery  and the food was great. We both tried this chicken biscuit that was covered in gravy and cheese and for this meal I tried to replicate but with my own twist. The ingredients needed for this meal are:

Boneless Skinless Chicken Tenders (cut in half)
Italian Dressing
Buttermilk Biscuits
Eggs
Gravy (kind you prefer)
Quick Grits
Shredded Cheese
Along with these items from home:
Skillet
Large Pot
Small Pot
Cookie Sheet
2 Bowls


First remove chicken from packaging and put in bowl (Remember to wash hand when handling chicken). Then pour the Italian dressing over the chicken, cover and place in refrigerator for about 2 hour to marinade.




Then with the Skillet adding a little oil and heating it and cook the chicken until light brown.  




Place chicken on paper towel to drain extra grease and set aside.




For the side items you can choose what you want, but I brought items that could be made fast.

The biscuits I took out of the can and place on the cookie sheet in a preheated of 350° for about 10 minutes or until golden brown.





I made the grits the same way I did before when I cooked the Sausage and Egg Casserole. Boiling water with salt and then adding the grits until they are thick then add butter.





For the gravy, I just opened the can and place in pot and warmed on the stove until it was ready to be served.




The last thing I did was make the eggs, you can cook them any way you want, and I scrambled mine and added cheese on top.





Once everything was cooked I plated the food. First I cut open a biscuit and place 2 pieces of the chicken in it then putting the top back on the biscuit. Next I put gravy over the biscuit and sprinkled with cheese. Add the grits and eggs to the plate to finish it up.


Serve.

Chicken Roll Ups and Hamburger-Cheese Dip


Hi everyone! I know it seems forever since I last posted, it has been crazy around between classes, work and getting sick. But those are just excuses and for them I apologize. I have been cooking and saving as always and here what I have cooked lately….. Chicken Roll Ups and Hamburger-Cheese Dip. The Chicken Roll Ups is a dish I found on Pinterest that I have wanted to try from awhile, so got the recipe from the website Jenna’s Journey. The Hamburger-Cheese dip is a dish that my family serves at get together and love.

The ingredients used the Roll Ups:

1 pkg Cream cheese
1 pkg Crescent rolls  
2 Shredded, cooked chicken tenders
1.5 C Grated cheddar cheese
1 C Grated Mozzarella
Bread crumbs (Optional)
1/4 Stick melted butter

For the dip:
1 ½ Hamburger
1 Jar of Salsa con Queso
1 pkg of Cream cheese

Along with these items from home:
Pot
Cookie Sheet
2 Bowls
Small Bowl
Skillet
Knife
Cheese Grater
Spatula
Rubber Spatula
Oil


To start you would want to set out the cream cheese to soften and set the oven to 350°.

Then set a pot full of water on the stove, add to the water a little oil and butter, so that the chicken will not stick the pot. Then add the chicken. (Remember to wash your hands when dealing with raw meat).







Once the chicken is cooking you can start on the cheese. Grate both the cheeses using a grater into a bowl.









Set the cheese aside. Once the chicken is cooked, place in bowl to let it cool. Then shred the chicken.




Add the soften cream cheese to the other two cheese and mix together






Then add the shredded chicken to the cheeses and mix.





On the cookie sheet spread out the crescent rolls.



Added the mixture to the crescent rolls and roll them up.




Melt butter and top over the crescent rolls then place in oven for about 20-25 minutes.







Once cooked take out of oven and let cool.






Now for the Hamburger-Cheese Dip.

Start with in the Skillet cooking the hamburger meat until it done and brown in color.






Once the hamburger meat is cooked, drain the grease from it and low the temperature of the skillet.

Add the Cream Cheese and jar of Salsa con Queso.



Mix the cheese in and let simmer for about 15 minutes.





After 15 minutes remove from heat and it is ready to serve.





Serve  the Chicken Roll Ups and Hamburger-Cheese Dip (with chips).

Anniversary Chicken, Twice Baked Potatoes and Salad



On Sunday, I decided I would cook a meal that my family enjoyed when I cooked it at home.  It is also pretty simple to make when you’re having a busy day. These are all the ingredients you will need:

-4 Baked Potatoes
-Chicken Tender or Breast
-Teriyaki Sauce
- Ranch Dressing
-Mozzarella Cheese or whatever cheese you want
- Real Bacon Bits
-Honey Mustard Dressing
-Salad (Optional)
 Along with these items from home:
-Oil
- Salt
-Tinfoil
-Two pans
 -Bowl
-Spoons and Spatula




I started with the Twice Baked Potatoes because they would take the longest. For five people, using four potatoes is enough. To prepare, set your oven to 350°. Begin by washing the potatoes (because you will want to eat the outside of the potato, wash them with a little soap).







Once the potatoes are washed, you will need tinfoil to wrap the potatoes with after rubbing each potato with oil and then sprinkling with salt. Once wrapped, poke holes in each potato, so the heat can be released. Put the potatoes in the oven on the racks at 350° for about an hour and 30 minutes or until the potatoes are tender.

Once the potatoes are cooked set them aside to cool. Lower the temperature of the oven to 250°.







Now that the potatoes are cooked you can began on the chicken. 

To begin, run water over the chicken to clean it. REMEMBER when working with chicken to WASH YOUR HANDS.

I used Chicken Tender with this recipe but you can use any type of chicken you want or have at the time.









 Heat a skillet to medium heat with a little oil in the bottom. Add about four of the tenders at a time and cook both sides thoroughly.

Once all the chicken is cooked, line a pan with tinfoil and place the cooked chicken on the pan side by side. 






Pour over the chicken first the Teriyaki Sauce and then the Ranch Dressing. Run a spoon over the chicken to make sure that all the chicken is cover with the sauce and dressing.  You can top the chicken with about anything once this is done; I decided to use Mozzarella Cheese and Real Bacon Bits.

Put the pan in the over at 250° for about 20 minutes or until the cheese has melted.

When the chicken is in the oven, continue with the potatoes.

Now that the potatoes are cooled, split each in half and using a spoon, spoon out the inside of each potato, leaving just the potato skins. 







Put the insides of the potatoes in a bowl.  Mix with Ranch Dressing, Honey Mustard Dressing and more Mozzarella Cheese and Bacon Bits.

Put the mixture back into the potatoes skins and top with more cheese.







Take the chicken out of the oven once all the cheese is melted and place the potatoes in the oven at the same temperature for about 10 minutes or until the cheese is melted on top.

This is how the potatoes and the chicken will look. 







After this you can plate up the meal, adding a salad, ending with a perfect Sunday dinner that was less than $25.
